Cherry Glazed Spareribs

I was shopping while I was hungry last week and picked up just about everything that looked good and threw it in the basket. This rack of spareribs was included. Haven't done spares in quite a while. Sided them up with Cheesy Potatoes (old Weber recipe) and some balsamic green beans with honey.

Did a standard 3-2-1 cook. Used Simply Marvelous Cherry Rub.

On my 18" WSM running at 230. Cherry wood for smoke.

3 hour mark.

Got ready to foil.

Applied a generous amount of Ancho Cherry Sauce that I use on my ribs. Also brown sugar.

Then another layer of the Cherry Rub.

Did the same thing on the back side of the rack and added some honey. Wrapped for two more hours in a double layer of heavy duty foil.

Put together the Cheesy Potatoes.

5 hour mark.

Applied more sauce and let go one more hour without foil.

Potatoes on the grill for an hour and twenty minutes.

Ribs at 6 hours. Probe tender and smelling great.

About a 15 minute rest while I got going on the beans.

Cooked the beans over medium heat in CI skillet with olive oil and chopped garlic.

Potatoes done.

Added the balsamic vinegar, honey, onion powder, and salt and pepper.

Ready to slice.

Plated it up.

I was really happy with this cook. The ribs were delicious. Little or no smoke ring however. That seems to be my specialty. These potatoes are always great. One of my favorite Weber sides. Hope you're all having a great weekend. Thanks for looking!
 
We haven't made spares in probably two years, been on a baby back kick. Although seeing yours it's about time to give spares another go around. Great cook Cliff!
