This was a cook I did a couple weeks ago, and it was out of sight and easy.
Started out grilling 2 ears of corn, then did the lineup for the corn meal topping and mix it all together.

Ingredients for the Tamale pie. Starting out will brown the pork sausage in the 12” CIS, then will add everything else and cook for 7 minutes till thickened. Then off heat and added the pepper Jack cheese.

Corn meal topping goes on then will cook for 15 – 20 minutes till brown, rotating skillet half way through backing. Ready to go in and cool.

Plated and man was it good. Will be doing this again for sure.
Just a little rain coming down.

Thanks for looking.
P.S. This recipe is out of the Cook It In Cast Iron book.

Your Cast Iron Skillet Pork Tamale Pie looks delicious Barb, i have to give that a whirl.
I wish it would rain here, need a break from the heat, and i live at the beach.

Barb that looks great. I have never had a tamale pie, I think it's time to change that.

Barb,
That is brilliant...almost seems like a southwestern version of shepherd's pie. If that pie were in front of me right now, I'd skip the plates entirely and eat straight out of the skillet!
