Well, using the WSM as planned for my carnitas cook went out the window due to heavy rains. In years past I would set up the tent and continued on but I think we’ll just have to have some ribs later into Memorial Weekend. So, I cooked them inside sensa smoke.

Into the oven for a long slow braise. MTF…

Look at all that beautiful pork fat! Were you able to save some before adding the other ingredients? I'm thinking hash browns or American fries...
