Well, using the WSM as planned for my carnitas cook went out the window due to heavy rains. In years past I would set up the tent and continued on but I think we’ll just have to have some ribs later into Memorial Weekend. So, I cooked them inside sensa smoke.

Into the oven for a long slow braise. MTF…

Here’s the pork chunks after the long slow confit.

Look at all that beautiful pork fat! Were you able to save some before adding the other ingredients? I'm thinking hash browns or American fries...

Homesick Texan Carnitas

3 lbs. boneless pork shoulder or butt, cut into 2" cubes
1/2 cup orange juice
1/4 cup lime juice
4 cloves garlic, peeled and crushed
1 tsp. ground cumin
1 tsp. Kosher salt, plus more to taste
Corn tortillas, for serving, plus Avocado slices, chopped cilantro and fixing of your choices (like pickled jalapenos, onions, lime wedges, coleslaw).
