Inspired by Tony's post, I tried creating the same type of magic his papa did....
shopping today at the local Mexican Supermercado, i found some great lookin' beef skirt, so i bought a few pounds.
Marinated it in mojo a few hours with a diced red onion.
whipped up a batch of Pico de Gallo...
...then got the Weber 26"OTG ready for action, with Maddie on the look out for coyotes...
Once the fire was hot enough, the beef hit the grill with a coupla red peppers...
minutes later, it was pulled from the fire, sliced thin and added to the sautéed onion from the marinade.
the red peppers from the grill were also sliced then added to the mix.
la cena was served up on flour tortillas, and a traditional drink of fine tequila was offered. Sorry Mike...
may not be the same magic Tony's papa made, but this was a nice dinner.
