Brisket training: Oh Yeah !!!


 
Am pretty sure that he isn't cooking brisket according to temp, rather, he's going by look and feel.

You are perfectly right.
I moved in the past cooks from 2 temp probes in the meat to NO TEMP PROBE in the meat.
And more, I stopped poking for probe test with my loved Thermopen Because I usually look for temp while poking and I was influenced by what I read.
Now I use hand for feeling and thoothpic for probe test.
Need to improve my feeling but this is the fun part!

The results look fantastic. I still use the 2 probes from my maverick. I stick them in and let the Mav tell me when I reach 180. At that point, I turn the Maverick off, remove the probes and use them for the probe test
