Brats with Stewed Peppers and Campfire Beans

It's been a rough few months for us but finally got around to doing some cooking this week. Decided to do Beer Brats and Stewed Peppers along with another pot of the Campfire Beans. They don't last too long around here.

Here's the ingredients for the beans (excluding the jalapeno, it's for the Brats later tonight).



Got the hamhock, pinto beans and water in our 7 Qt. Dutch Oven.



Used my Vortex to bring beans to a rolling boil.





Raised grate to reduce to a simmer for two hours.



After 2 hours stirred in bell pepper, onion and garlic. Stirred and let it roll for another 2 hours.



Stir well.



Lifted and recharged the Vortex.



Stirred in the chili powder, salt and pepper.



Here are my Brat ingredients.

Threw on the Brats.





Mixed with the peppers and gave a few more minutes.



Plate.



This is one of our favorite cooks. Came out really well. Brats were delicious and the beans had wonderful flavor and went well with the Brats. Thanks for looking.

Cliff, here's to things looking up, and some great grub to get ya started (practicing those brats for the return of the boys of summer??)

Awesome cook Cliff. I love how you used the Vortex. I just got one and I'm looking for tips and that looks like a good one.
 
Great cook Cliff, I'm always looking for new ideas for my Dutch oven, and those beans look great! The vortex has made its mark by making some incredible wings, but it's amazing how many uses the vortex actually has. It has become a must have in the grilling arsenal. We had brats Saturday nigh, but mine didn't look nearly as good as yours!

Lot of time and love in those beans they had to be great. Brats look outstanding also. Knew it would be a great cook when I saw who did it. Here's hoping for smother times ahead.
 
Cliff in my opinion you hit that one way out of the park. All of that stuff are favorites of Kim and I. Wonderful cook! To me that's what outdoor cooking is all about.
