Black Iron Game Hens

A couple of 2.5 pound game hens, one seasoned with Mo Rockin and the other with Tony Chachere’s
Original Cajun. Put back into the refrigerator to marinate in the rub for the next few hours.


I have cooked plenty of chicken in the black iron skillet but never game hens, so since it was
raining today I decided to use the Weber Performer and cook them in the skillet. I put some garlic
and onion in the pan with the hens. Garlic and onion were seasoned with Way Out West from
Savor Spices.


Put onto the Performer, using Stubbs charcoal and a couple of small chunks of pecan.


I did mention it was raining, right?


Pot of Bush Smokehouse Tradition beans topped with some cooked bacon getting ready to hit the grill.

Hens and beans are done. 1.5 hours at 300 to get the hens to 165 internal.


Plated with some leftover potato salad.


Delicious Sunday dinner. The garlic did not overpower the hens as I thought it would.

We're dodgin the rain here so far today. It sure looks like you're making the best of it. I definitely like your technique: looks like it produced a great lookin Sunday meal.

Excellent looking meal Mike!!! Toss a bunch of garlic in there next time, garlic mellows out and turns sweet when roasted and goes excellent with chicken!!
 
Thanks everyone. John, I had a few cloves in there. Will do it like 40 clove chicken next time.
Matt & Mike: I have a friend who is one of our store reps who has the Kingsford account. He had a
few extra canopies left over from some displays and was going to throw them out. I saved him the work
of throwing them away. ;) Just had to straighten a couple of bent legs and they are like new.
