Birthday Brisket and Sausage 2021

I cooked a brisket and some homemade sausage for my birthday this year. I do something similar pretty much every year.


Got an 11 pound Sam's prime brisket.


Trimmed and seasoned with Kosher Salt, Black Pepper, and some Meat Church Holy Cow on the fat cap side.



Ran the fire at about 275 with oak and pecan splits.


Right before the wrap. I need to work on my trim. I kept having moisture pool on the top.


Unwrapped. I cooked this brisket friday. I let it come down to about 160 and then put in a turkey roaster
set to 145 and held the brisket overnight to server saturday.


Came out juicy and delicious.


Trying to work on my presentation skills.


Ain't mad at that!


Plated with some mac n cheese and german potato salad.

Happy Birthday and great cook. That full plate pic is amazing. Look at that black bark and smoke ring, wow! I knew I had found "my people" when you guys were cooking on your birthday. I have had family members make fun of me because all I wanted to do on my birthday was cook my meal. Then I find you guys and I go see, I am not the only one!!!
