BIG beef DINO ribs

Its been a while since I've posted any cooks so I figure this is as good as any to go with. I usually cook beef back ribs, but around here they are always way overtrimmed. So Saturday afternoon I was in the store and I'm seeing short ribs and ask if they have them uncut and they do. So here they are. The entire cook was in the 300*-325* range on the performer, and was about 4 hours, very tender but mabye could have gone 30 min more. The one in the middle is rubbed with Wolfe original. The two outside are my goto beef rub

Oh man, I just ate breakfast but could go for some of those. Short ribs are awesome and full of flavor. Awesome job rendering those tender!!
 
Those are huge!! They look perfect. Now I'm hungry. Unfortunately, my pepper stout (Octoberfest) beef won't be ready for another two hours.

Smart move asking for some uncut! Short ribs tend to have more meat on them. I'll have to remember to ask next time.

Stopped into a Costco on my way back from Virginia Wednesday. Not a member, but was looking to see if they stocked wire storage racks. Saw they advertise Choice beef over the meat section so went over to take a look. Lots of uncut "short ribs". Cheap. Meat section in this Costco is making me think again about getting a membership.

Was that Costco in VA. The BJ's by me is horrible. Sams and Costco not much better. Even staples like butts and ribs are not that great. I have better luck at an OLD Shop Rite or the Commisary, both have butcher departments that will make custom cuts. All the rest of the stores either don't know how or say they they get stuff already cut. Sad
 
I just picked up five of these from a local butcher, they are about a pound each ($3.99) I want to do them on my WSM. I am thinking lower temps for a little longer 225-250, 4 hrs. What d'yall think. I will have some pork ribs on at the same time.

Apologies - it was BJ's not Costco. And it was the one on Woodland Ave (420) in Springfield PA.

Not a big fan of the BJ's and Costco around me, but the meat counter at this one actually looked pretty good. Not a member, so didn't pick anything up. But got me to thinking of getting that trial membership again if it comes in the mail and pick up some beef ribs at least

Low would work just fine. They may even come off at the same time as the ribs espicially if they are spares. You will love them. You might even ignore the pork. Let me know how they come out.
