Beer drinking jerky!!

Evening folks....long day today...this cook actually started yesterday when I stopped to pick up a LB I found a sale on top round so jerky sounded good! I picked up 2 lbs of meat for about 6 bucks!! Found my old jerky recipe ( old mountain man gave this to me!! Might have been grizzly Adams but can't be for shur!)

Soaked the meat for 24 hours... Didn't get it quite as thin as I liked but then again it was last minute! And Appearenty photo bucket doesn't like my slicing skills since it won't load my pics...ok so meat 24 hour soak...went to our Sunday football breakfast.. I whipped up a tortilla egg casserole which was awesome ...first shot and was super!

Ok so went to some friends!!! Watched the Seahawks loose...man what a game...I am not sure I have a clear understanding of "pass interference" any longer!
Got home and fired up the smoker with a moderate snake and hickory!!

Did up some snacks since we were making snacks and watched the late game!!(lame)

And all said and done at about 6 hours at 165 or so..

Good stuff if you like hot...I think I misread the recipe and used tablespoons instead of teaspoons(I only have this issue when cayenne pepper is involved)!!

I like it oh well more for me!! Take care folks!!
 
The tortilla egg casserole intrigues me, that looks like something that would be great to make a batch of and stash in the fridge for breakfast all week. And the jerky looks even better.
 
Jerkly and egg casserole looks really good. What all do you have on that snack plate, it looks awesome too!!
 
Some of the best looking Jerky ive seen...I really need to try make some. Care to share the recipe? Well done!
 
Third for the jerked request. Would like to try it also.

No problem guys....

1/2 cup white sugar
1/4 cup pickling salt
1/4 cup worst sauce
1/4 cup dark rum
2 tbs Montreal steak seasoning
1 tsp cayanne pepper
2 tsp red pepper flakes
1 gal cold water....

Mix well and soak meat for 24 to 36
Hours, remove,
Drain well and toothpick up. Smoke in the WSM between 150 and 175 with hickory for 5 to 7 hours until dry but not brittle!

I only modified by using two 10 oz can's of Ro-Tel and I mixed some sweet white and green onion instead of just sweet! I would have topped this with a little cilantro sour cream had I though about it! Will be doing it again soon!
