Beef On Sunday

seasoned up this 4 lb hunk of chuck roast with a homemade Santa Maria rub

and just when I got it on the grill, the snow started coming down.... and I mean comin' down...

meanwhile, I gathered the usual suspect to finish this cook...

...except the usual stout. this time, I employed a punky kid eetin' breakfast...
Double Chocolate Coffee Oatmeal Stout.

anyway, here's the chuck ready to come off the grill and on the peppers, onions, gaaaalic and liquids

after ANOTHER 3 hours, this stuff is almost ready... but we'll uncover it and chuck it back in the oven for another hour...

As Always! Pepper Stout Beef is the BEST RECIPE I've ever come across.
