Ballistic Griddled Pattymelt

Figured I would try something different breaking in my new griddle.

First thing heated up some waffle fries


Was afraid I might have a grease fire cooking bacon directly over the coals so I cooked the bacon most of the way in the microwave then finished them on the griddle


Made some 1/2 lb burgers using 85/15 beef. Seasoned them with some copycat Fuddruckers seasoning and topped with some salted onions and smashed them into the patty.

Sandwich prep. Used 4 different cheeses on my sandwich, Habanero Monterrey Jack, Colby Jack, sharp and mild cheddar. Cleaned up some Hatch chilies I had in the freezer, and bacon.

Really like the griddle but disappointed with the fit. I had to take the lip off to get it to lay flat. If I want to use them in the future I am going to have to bend the tabs at the end in and grind the tabs at the top to get it to fit correctly.
 
Looks like you had the process down and everything you put on those sandwich's added another flavor level, very nice cook.
 
I was thinking about making patty melts the other day, you beat me to it, and mine will not be nearly as tasty looking!
