Bad Winds and a London Broil

It’s been a terrible week here in the high country. All week long we’ve had winds with a constant 30-35 mph and gusts over 60.
No grilling in that type of wind especially with all the junk in the air including lots of roof parts coming off the houses, shingles all over the street. Fortunately for us no damage so far.
I thought that Friday was going to be a lot quieter…Wrong. So now I have a London broil that’s been marinating for 24 hours in a new marinade I found. What to do.
Decided to make my own grill with a CI pan.
Here’s some pictures.
I know it’s not a grill cook but I thought I would share it anyways. Had to do something.

Seared on both sides
Placed on a wire rack to get it off the direct heat, not shown was it was covered.
Basted with the remaining marinade until it hit 120.

Rested for 10 minutes. Came out perfect.

Barb made some steamed veggies and I made some cheesy potatoes as the sides.
Great meal.

Looks great! Necessity can be a mother sometimes.
I suppose that's why most people cook inside.
