A callout to @Lynn Dollar and his posting from last month on this great grilling idea
I gave this a try last night - tricky to make as the thighs I got were smallish and the smooth skinned jalapenos were like a wet bar of soap that kept squirting out while wrapping. It took several toothpicks to get them to stay put.
And, I didn't have the nifty pan so some of the cheese (shredded block combo cheddar/gruyere) oozed out the open end.
Still - these were really tasty!

Meat Church Gospel All Purpose rub on the 26" Kettle, with 20 Weber Briquettes , 10 per side to start cook at 300* and finish at 265*, and a big chunk of cherry wood split into six pieces .
