Well a lovely morning turned into a drizzly afternoon. But here in Scotland, why let a little rain put off your BBQ!! 3rd attempt at ribs after a couple of learning curves.

Got the brand new maverick out, had to carefully lay the lid on top as I haven't had time to order the parts to make a hole for the cables yet.


Ribs rubbed with some deep South brown sugar rub


Smoked for 2 hours, foiled with brown sugar, honey and apple juice for 2 hours, then sauced with hot BBQ sauce for 25mins.

These things came out brilliant! You don't find them in restrauntes in the UK like this anyway haha!





Not a huge smoke ring but it's there :)


Sooooo moist!!!

Didn't want to ruin them with filling up on sides, so here is your plate! Simples!


And the leftover! Nae meat!!

Brilliant!! You have mastered the learning curve for sure. In honor of your perfect looking ribs, I will treat myself to a nice single malt this evening! :)

Tony, I picked them up from Macintosh Donald butcher in portlethen. 9 ribs per rack with a weight of 500g. Would have preferred 700g-1kg a rack but they were still plenty meaty. Cost £10 for the pair.

Costco have some good babybacks if your ever up westhill way. They come labeled as loin back ribs.
