Nothing special about this cook except for two things. One, I tried a different rub on the ribs, Dizzy Pig Roaring River. I’ve used this on other cooks but not on ribs. The second PSA is I finally got some peach to smoke with. I’m kicking myself for all the times I missed out on this great wood. Try this, for real! I apologize to everyone who has been using peach but for me it was a truly unique and enjoyable surprise.
Wicked Good with one hickory and three peach.

Rubbed and ready to go…..
Three hours in and just added some apple juice.
Fired up the Performer for potatoes and asparagus. Waiting for the coals, it was picking time. Yes, we like peppers around here.
Taters and gus are ready.
