A Three CI Dinner

So Tony and Maribel's cook a couple of days ago reminded me of the dish i had on vacation in Puerto Rico, There were no small Red Snapper available so I went with their cousin Porgies.

Seasoned with a home made rub of Cumin, Chili Powder, Kosher and Fresh Gound along with Hot Paprika, dredged in flour. And a special clam dish to go on for fifteen minutes or less when all else is done

This clam dish using Little necks that came into my Fish Monger today are done in his favorite recipe
One bottle of a good Stout, I used Dogfish, five cloves of garlic finely diced, and one half stick of butter, on the grill covered with foil until clams open up. It is delicious.

You just keep outdoing yourself ... That fish in the bottom picture looked so good, I could've sworn it winked at me! ;)
 
Bill, that is one awesome looking meal!! Lovin the clams!! That's one thing I miss about living on Long Island is the fresh seafood!! Great cook my friend, just a great cook!!!
 
You'll love the Porgies Chris, they are caught right off our waters here and all down the coast. Light fairly delicate meat with a nice taste
