So I’m doing baby backs and very satisfied with my “accomplishment”. Hell, 250 plus or minus three over 4-1/2 hours is pretty good. They looked great when I hit them with the apple juice at three hours, and again at four. I’ve played this before and it’s 4-1/2 hours until they’re done, sauce them for 15 minutes and life is good.

NOT! Nancy comes out and says I have wings. I say “sure, I’ll just throw them on the smoker”. Uh, it occurs to me I’ve never smoked wings. What temperature, how long? What do I do?!?! Let’s just say I’m making diamonds out of coal in a region we won’t talk about. One PM to Mr. Lampe and the problem is solved within minutes. Kicked it up to 325 to 350, EVOO on the wings followed by Penzey’s BBQ 3000 on half and Northwoods Fire on the other half and life is indeed good. I’ve been very fortunate to make some friends in my brief tenure here. To all of you, I say thanks. Mr. Lampe, a very special thank you to you tonight.
