A High heat Butt over Brisket for my Birthday. Butt was seasoned with S&P and the brisket with tatonka dust.
Started at 7am with Weber charcoal and red & white oak chunks. 4 hrs roughly at 320 and 2 hrs foiled.
Came out like butter.

I guess I need to start thinking about what I want for my birthday in August. I like the double product idea, I think that’s smart, then I won’t have to cook for a couple of days!

I really enjoyed the pork with just S&P. Pork & Smoke flavor worked well with some #5 with defatted drippings.
First time I tried the BoB and the pork drippings basting the brisket really does work. Nice bark with a moist flat.
