As long as I can remember my mom would make this meal for us in the morning and for dinner. When Maribel meet my family she said why are we having eggs for dinner? I had to tell her this is a family favorite and we eat at any time.

Here's the cook.

Started with a few jalapeños, onions, garlic, tomatillos.

Of they goth the blender with 1 tsp of salt

Then we make a few of this.

Then in our Dutch oven... Added a little oil and then the green sauce goes in and bring to a boil. Then add the eggs. Let them be happy for 5 min on med. heat.

All was cooked outside on my gas grill. Here's the finished result.

Tony, there are several very authentic and fantastic Mexican restaurants around here that offer egg dishes on the menu. For some reason, I have never tried any of them, truth be told I sort of figured they were something made for the gringos. After seeing what you just posted I am going to order some of those soon.

Some restaurants will allow you to do a sampler. Tell them if they can give you a plate with different options. That way if you don't like something your no stuck with the whole plate. Just ask. I have done it for shrimp dishes and chicken.
