3 Hr Baby Back Ribs

I used Jamie Purviance's Weber's Smoke Cookbook for Best-On-The-Block Baby Back Ribs as a guide for this cook. Interestingly, he instructs us to use 300 - 350*F (which he calls low heat) that produces Baby Backs in a 3 hr cook. I gotta say I've never cooked ribs so fast and - wow - it works like a charm. I can't say I followed his recipe to a "T" but never-the-less they were Great Ribs! Thanks Jamie!

I slid a pot of beans under the ribs during the last hour.

I think some others of us are liking the hotter-faster ribs for a change of pace, and you nailed 'em!
 
Killer ribs, been doing low and slow, but looks like there's a lot to be said cooking them high and fast
 
Great cook, I find on the kettle the longest to cook ribs is 4 1/2 hours and that's staying at 275-300. Anymore time and they over cook and loss moisture. Maybe I'll just go to 300-350 and quicken the cook time.

not so many beans tho' cuz they mak... well.... just a few beans :o
 
Oh, it's just the sweet baby rays everyone is going googol over... Haha, I could pour that over rocks and eat them!


I agree with everyone , they look really good!
 
Those ribs look great! For the beans, that lid keeps all the rib drippings out, I say let em in!
