It snowed this week (in N. Alabama!), I got called in to work yesterday on my day off, then a friend of ours had a relative pass away so we went over to help with the reception following the service. It was NOT the week I had in mind. So, on the way home I told the wife we're gonna pull an overnighter. I stopped by Wally World and came out with a 15 lb packer -- a thing of beauty, then to Lowes for some Stubb's 15 minutes before they locked the doors.
I got home with an armfull of fun, fired up a heapin FULL chimney of Stubb's, loaded the charcoal ring heapin FULL with ~ 20 lbs Stubb's, rubbed the packer down with SPOG, poured the lit onto the unlit, let the nasty smoke clear until I got a clean fire, put it all together, added four med sized chunks of hickory, threw the packer on about 2300 with all vents 100% open, drank a cpl brews while the cooker settled in at ~ 240*, and hit the sack about midnight.
I woke about 0630 to a cooker chuggin away at 280*.
Temps were in the high 20's here last night so I anticipated burning some fuel and it did. So, I made coffee, refilled the water pan, and put the remainder of the second bag of Stubb's on the coals via hot squat. After the nasty black smoke cleared and it started burnin clean again, I put her back together for the run to the finish line.
It hit the stall about 0830 -- it hung at 183* for ~ 2 hrs -- but rode it out. Finally, it cruised on up to 200*, I tested several areas with the Thermapen probe. It slid in all areas without resistance so I declared victory at 1200.
I averaged 250* (during waking hrs), 1 hr cook time per lb of beef, and ~ 2 lb of fuel per hr of cook time (wow!). All in all a very successful stress free cook IMHO -- no flippin, no turnin, no foil -- just let it go. I sliced of a few pieces while it rests, served with just a spoonful of home spun sauce, a slice of Shiner Bock Bread, a Pickle, and it's Lunchtime!
