Teres major steak from Porter Road Butcher. It's hard to believe this steak comes from the shoulder but eats like tenderloin. Salted, took it to 135°F, simple, juicy and delicious!
Cooked perfectly Chris. I've never seen anything like that here, but then again I usually only hang out in the dog food section of the meat department .
And they’re out of it ! Better to have things be “out of stock” and fresh than laying about! That will also drive some “urgency” as we used to call it when I was selling vacuum cleaners!That really looks wonderful Chris!
