I'm not much of a meatball maker, but I've made plenty of meat loafs.
So I kind of went with that.
83/17 ground beef, egg, seasonings, onions, hatch green chile sauce, and bread crumbs.
A little smaller than golf balls.
Mixed ketchup with some Heinz Tangy Carolina sauce for a bath.
Topped with Provel cheese.
