Those look great, Chuck! What's your verdict on fire roasting versus "normal" grilling? Did it add something to it?

I do think it makes better food. I've only roasted stuff over Oak, but it's been a winner, so it's not likely I'll change wood. I normally cook at 800+, but I gave these New York's a break and cooked at 500ish. I probably could have gone to 600 and gotten a better crust

Thanks, Chuck. Will have to give this a try....have some almond splits hanging out that should burn nice and hot! Looks like you started with a small bed of coals (briqs or lump?) and then 2-3 splits of wood?

I read you're getting ~6 eggs per day now - have you tried pickling them yet? And have you whipped the eggs with water (not milk) to get that killer omelet texture? (3 eggs to 1 Tbsp or so)

Yes, about a half dozen fully lit briqs to catch the wood on fire

Pickling is on the to do list, but not yet done. I haven't been making any omlets yet, but that too is on the to do

Better use that chicken soon, otherwise she'll only be good for stew. :p
 
Really like the homemade roti Chuck. Got some olive wood I use in the kettle pizza going to give that a try with a couple of ribeyes , it has a mild slightly sweet taste and burns very hot.

Steaks look perfect, but Im warried about 'Rhonda'!
I cant understand that pic between grilled steaks and sliced steaks ?!?!?
 
Don't be worried about Rhonda, she's my favorite chicken. She will tell you when she has an egg to be picked up. The coop is very close to my man cave so she hangs with me when I BBQ. She gets a taste of everything, her favorite is BBQ chicken, go figure :)
