    Searing over charcoal ring

Depending on time, I some times cook my tritip at 350 with no water pan or fire dial until it's about 125, and then sear for 5 minutes over the ring, flipping it fairly frequently. It usually ends up right around 130, which is where my family likes it. With more time I do it pretty much like...

    Searing over charcoal ring

I have become a real fan of using the WSM to sear by removing the middle section and placing the grate right over the top of the charcoal ring. I did it again yesterday for a couple of tritip's. Get them to a bit below target temp, remove middle, set grate on ring and sear away. I used to...

    Praise for WSM

As I was scanning my local Craigslist I found a used Green Mountain Grills Jim Bowie for sale. The auger isn't working, and he wants $100 or offer. I'm at least going to look at it. Parts are available from GMG. For that price, if it's in good shape otherwise it might be hard to say no to. ON...

    Praise for WSM

I agree completely about using non bagged wood when you can. We are fortunate to live in the fruit producing region of Washington and have relatives with orchards. Plenty of apple and cherry especially, and my parents have prune trees, and that gives an entirely different smoke flavor.

    Praise for WSM

I've been a pretty die hard Weber fan for more years than I care to admit. Have tried some nice offset cookers, top of the line gas, etc., but overall nothing ever comes close to Performer's, Plain Kettles, and WSM's. My wife has a Weber gas grill for quick cooks and heating some things up...

New Weber pellet grills for 2020

Glad I'm not the only one to have noticed what seems like a big increase in marketing by Traeger. Competition usually means good things for the consumers, from pricing to innovation.

New Weber pellet grills for 2020

My wife has two Weber gas grills, I have two kettles, a performer and a WSM 18. We like Weber products. The gas grills are great for quicker cooks and convenience at times. Things like truly great beef (Kobe steaks, etc) get cooked over charcoal. Brisket, pork butts, ribs, etc., all charcoal...

    Really liking WSM

So far I have use my new 18.5 WSM to cook a pork butt and smoke a turkey. Even with the very first cook the temp was easy to regulate and keep steady. The results of both cooks were fantastic and received rave reviews from the family. With some of the leftover turkey my wife made some...

Impressed with first cook on WSM 18.5"

After doing some reading I decided to not season my new WSM and instead just keep a close eye on the temps. I purchased a nice 8lb pork butt and used the Mr. Brown recipe and the sopp. Temps were easy to maintain and I am extremely happy with the results. Nice bark and just the right amount...

    Q100 just keeps on going.......

I am a pretty died in the wool charcoal guy and really like my Performer platinum, but years ago bought a Q100 for camping trips. A few years ago my wife was wanting to grill something quickly and I wasn't around so she grabbed the Q100 and set it on the patio. It ended up staying there and has...

    Cooking single butt.....top or middle?

We are in the tricities area, just outside of Kennewick. We lived in western WA and western OR for quite a few years. I started the butt last night about 8pm. With all the vents open 100% it got up to 200deg in about 5 minutes and I closed the bottom vents to 25% when it did. In another 15...

    Cooking single butt.....top or middle?

I am going to cook a single bone in 8lb pork butt Sunday in my new 18.5" WSM. Should I cook the butt on the top rack or on the lower/middle rack? If I use the middle rack I assume I want to figure that it will be about 20 degrees cooler than the dome thermometer? Thanks for any advice.

    New guy from eastern WA

Quite a few Washingtonians and former Washingtonians here. I actually still consider myself an Alaskan as that is where I spent most of my life. You are right about some mouth watering food on this site. I am really enjoying the recipe's and pictures.

    New guy from eastern WA

Hello Everyone, I've enjoyed reading the forums for a while and decided I better join. I've been a diehard Weber kettle grill guy for years and years. My current Weber kettle is a Performer Platinum that I've had for quite a few years. I've also owned several of the plain Weber kettles and...
