    I'm looking into stripping down one of my cast iron Dutch ovens and was thinking of trying to do so on my 22.5" platinum but not sure I can get it hot enough. What's the max temp you have had your kettle up to? I'm not site of I've had mine above 500, maybe 475ish.

    I picked up a 5 1/2 lb whole chicken after work today and am planning on cooking it Sunday for dinner. I want to get it in a brine sometime Saturday so it can sit in it Saturday till Sunday night. This is my first time, where do I begin with making up a brine for the chicken? Any good recipes?

    WSM mini smoker purpose ?

    Cheap to make, portable, multiple uses, and it looks freakn awesome! Need I say more. I love mine, I've done three Boston butts, ribs, and ATB's on it, with a whole list of other goodies to smoke on it.

    I ended up pulling it at 194, it was probe tender, like butter! Now it sits wrapped and in a cooler until ready to pull. While I have some ABT's cooking on the kettle, with some baked beans. Not homemade ones though, I haven't ventured into that yet.
