My first spatchcocked chicken, and it was tasty. I was going to brine, but decided not to. I did however have a water pan below the chicken with a 1:1 of water and apple juice and dropped a small piece of applewood in there. Cooked around 325-250 and took almost 1 1/2 hrs. I didn't see why I would have had to brine, it was very juicy.
I cooked this on my weber platinum, using a maverick et 732


 
Thanks everyone, this was my first but certainly won't be my last. I still can't get over how juicy and tasty it was, loved it.
