    reheating prime rib with foodsaver

Just wanted to say thanks for all the helpful info in this thread. I reheated brisket and pulled pork in foodsaver bags for a great July 4th meal - had a low simmer, put in 4 bags of bbq, stabilized at 150 degrees. Let them slowly come to temp while I prepped everything else and then served a...

    Weekend Butts over Brisket (w/Pics)

Thanks guys. John, to answer your question re water - I have the modified larger water pan (the brinkmann charcoal) which I filled at the beginning. It ran out probably in the last 2-3 hours of the cook, temps ran up to high 200s which at that point I always think is fine, especially for the...

    Weekend Butts over Brisket (w/Pics)

that did it Larry, thanks. Brisket was good, just not as good as the pulled pork - I had also had it frozen for a couple months so that might have impacted it.

    Weekend Butts over Brisket (w/Pics)

Did my first overnight cook on Saturday, two butts over one brisket. Started at 8pm, took off brisket in the AM, butts midday. - minion start of Wicked Good Weekend Warrior lump with mix of pecan and apple wood - 12 hours on the brisket, 18 on the butts (butts were not completely thawed out...

    Standing rib roast to large

Have the same issue, slightly different question - if I split a roast into two, would it take 20 min / lb (or there about) times 9 lbs or 18 lbs? I'm sure I should know the answer to that (and I'd assume 9 lbs), but want to be certain.

Smoked standing rib roast for me, plus some grilled sausage and polenta on the performer and other italian goodies (lasagna / caprese etc.)

Standing Rib Roast Food Safety Question

Perfect, thats what I thought. I'm getting it from a local butcher, so will be just wrapped in typical butcher wax paper - should I wrap it in plastic, or does that matter? thanks for the quick response

Standing Rib Roast Food Safety Question

If I get a standing rib roast on Friday the 21st, and cook it on the 25th (keeping it in a fridge in between), does that pose any food safety risks? anything that I can do to be more rather then less safe in terms of what kind of container to keep it in / wrapped in plastic vs. not etc? Can't...

    Frozen butts - Food Saver

Not to thread jack, but on a related note - how long do you guys typically boil the bags to reheat (assuming straight from the freezer into boiling water, and assume a ~4 person serving size / portion)? In my experience, I find 15-20 minutes is about right, but I wonder if I could go quicker -...

Genesis on a porch - safe?

Thanks - I figured it was probably fine but a little confirmation is always good.

Genesis on a porch - safe?

I keep my Genesis in the garage normally, but was thinking about moving it to a porch on the side of the house. My question relates to smoke marks - the porch is covered, and the "ceiling" / roof is about 8 or 9 feet above the ground - my concern is that if I grill / smoke regularly on the...
