    Chicago style Italian Beef on the Weber

    Looks great! I'm a huge Italian beef fan, especially Portillo's! As for what that "something missing", it could be pepperocinis when it's cooking. I think they are a staple of Italian beef broth.

    Out of the jar sauce

    I like Sweet Baby Rays, but my absolute favorites are the Cowtown BBQ sauces. The original is fantastic and I like mixing in the Night of the Living Barbecue Sauce for a little heat. Both of these sauces are by Okalhoma Joe's in KC and I consider it to be the best BBQ restaurant in the world.

    Brinkman Smoke & Grill

    At every Home Depot I've where I've passed through the grill section (okay, that's all of them!), these are on display but badly deformed. The lid never seals properly. That may be home depot's fault or the manufacturer.

    Replacement Knobs for WSM door

    I went to Lowes and bought a similar knob and locking nut. They work well for me, but the knob is smaller than the original knob. I think they cost like $3 total.

    As long as they don't crack or have odd particles in them that burn, then sure. As an update, I hammered it out and enamel chipped off, but it cooked just great. Obscenely easy to control the heat with this mod. Also, it was very easy to clean up by simply removing the foil. Fun side note...
