    Loimulohi fish grilling?

Thanks! I was hoping someone knew where that grill holder in photo came from. I can rig something up, but that looks simple and effective.

    Loimulohi fish grilling?

Anyone ever done the Finish technique of smoking/grilling salmon vertically on a plank next to a fire? So many great videos on youtube, very few in english. But in searching around I saw a "Monolith Plank Fish Holder" that would allow for this technique on any grill, ie kettle, wsm, etc. If...

Thanksgiving Turkey... posted a little late.

Friends, I have not posted in some time, and struggled to get back online. But in NH, backyard turkeys are pretty common. Following are some pictures of my Thanksgiving smoke. Any captions appreciated, but "at least Fred is warm in there" is taken...

    It must be me...

Appreciate the offer Scott. But Jersey here. No problem though. I boxed it up and will wait till the weather breaks and give it a try again. I bought it for long overnight smokes to work unattended all night. I am not there yet.

    It must be me...

Wow. Thanks Scott. But that is not my experience at all. I will try again by: 1. Not picking a 25 degree day with gusty north west winds. That may have created fluctuations that were difficult for the controller. 2. Definitely not plugging the controller in until temps settle down. My...

    It must be me...

Thanks guys. I also wonder if I over fired it. I used only half a chimney of kingsford, but since I turned it on right away the fan started running from the get go. I tend to think that is why it spiked. At the same time though cant figure out why temp would not come down. It never got much...

    It must be me...

Well, I tried an IQ 110 with no success at all and sent it back. Spent the additional money for the Digi DX2. Three hours into my first smoke, and kind of struggling With my WSM 22 and NO controller the cooking method I use is top vent wide open, bottom closed. With slight tweaking of the...

    consumption and size

I load up on kingsford at Home Depot on holidays. I pay less than $10.00 for double bundles of charcoal. My cost per bag is typically 3.50 to 4.00 per bag. At that price I don't think the price difference adds up to much.

    IQ 110, not really impressed.

I appreciate the links, but for me I just don't wish to "roll my own". I do all my own woodworking, even building my own kitchen cabinets. I tie all my flies for fishing. And I smoke lots of meat. I just don't wish to fool with electronics, but respect those with the skill set to do so. For...

    IQ 110, not really impressed.

Update: I returned the IQ with no difficulties. They even apologized for my lack of satisfaction. They tested the unit and said it worked fine. Possibly I did not give it enough time. I think what this lacks most is a digital temp readout. The flashing led's give an idea of if the temp is...

Plus 1 for the Phillip's crabmeat. We get it on sale at our local supermarket, about $12. Excellent!

    Flame proof pizza stone

We had a really great time and I would recommend it highly. If you can combine a class with a trip to Maine to eat lobster I highly recommend it. The instruction was top notch, facilities very nice, organization pretty darn good. It is hard to get in his classes. The last time the e-mail...

    Flame proof pizza stone

My wife and I took a wood fired bread baking class here, http://www.stoneturtlebaking.com. Mike, the teacher and a master baker said "never use corn meal, it just scorches and turns black". My wife and I looked at each other with that dumb expression.... It was one of those moments. From him...

    Flame proof pizza stone

A pizza stone gets black and gnarly looking quickly. In my case it was from using the incorrect flour. Many use corn meal on the pizza peel so the sticky dough does not stick to the peel and it slides off easily onto the stone or into the oven. While attending a pizza class though I...

    DigiQ DX2 on a WSM 22"

What is the learning curve like on the DigiQ? Do you have to fiddle with it through three or four smokes to figure it out or can you get good results from the start. I recall with my WSM it took the requisite three or four smokes for it to settle down an get long burns at consistent temps. I...

New to the Auber - what am I doing wrong?

Well Travis. I learned that Superbowl Sunday with a dozen people coming over for the game is not the best time to start up a new controller. I started my WSM up early and the temps were all over the place. I put the meat on and gave the controller about a half hour. That is not much, but it...

    IQ 110, not really impressed.

I have wanted an ATC for some time. Mostly for the longer smokes. Frankly, my 22.5 WSM is "set it and forget it" with temperatures. So on a 5-6 hour rib smoke I see little value in an ATC. But for Butts and Brisket I certainly do. Waking up once an hour to tend a smoker is not my idea of a...

    Pimp my WSM 22.5

Friends- Thanks for all of the suggestions. In the Charcoal department, I am in very good shape. When HD has the twin packages of 20lb bricketts on sale I stock up. I have run plenty of good smokes through my WSM, but I am in the Butt-Ribs rut and want to branch out. So my thinking was that...

    Pimp my WSM 22.5

Friends- If you had $300 to spend on your weber to "pimp it up" how would you spend it? Mine is 1.5 years old and I would like a temperature control system. Mostly for "set it and forget it" smokes. I also think a rotisserie would be great, both for the WSM and also for my Kettle. So, if...
