    Chuck timing questions

It came out amazing! I started it at 9, had to leave at 9:30. We had 25 mph wind gusts ☹️. I had it stable at 250 with all grates 1/4 open. When I got home at 1:00 the grate temp was 310 and meat was 170. Pulled it off, closed the grates to about 1/8, wrapped in foil and put back on. At 2:00 it...

    Chuck timing questions

I don’t have a pressure cooker but do have a crock pot. I may smoke for 3-4 or until 160, then either wrap and put back on smoker until pullable or put into crock pot with the drippings until time to leave.

    Chuck timing questions

We're having a family gathering on Saturday at 5 PM. I'd like to try to smoke a chuck roast to take. I have a church function from 10 AM-1 PM. Never doing a chuck before I'm not sure about the timing. I guess I could smoke it overnight on Friday night and reheat Saturday, but I don't want to...

Longest smoke possible on WSM 18.5?

I’ve done 18 a few times and it could’ve gone longer but the meet was done at that point

What are your favorite or recommended wsm modifications?

Garage door handles on the middle section are really handy imo.

Butt felt frozen on the very outer layer

Wife picked up two butts. The butcher had to get them from the back. Both looked great. One felt like the outer layer was starting to freeze when I trimmed it up and rubbed it. Neither said "previously frozen" or were frozen at any point according to the butcher. It wasn't frozen solid or...

Weber E-210, Home Depot Special or Regular

Thanks!! I've got a large Weber kettle and WSM for big grill jobs or smoking. I'm really just wanting a good solid 2-burner to grill up small meals quickly on my porch.

Weber E-210, Home Depot Special or Regular

We need a new small gas grill for my patio. I've got a kettle and WSM for grilling and smoking but we like having a quicker option so I had a 2-burner Lowes brand Master Forge for a few years before it rusted out. I'm 99% sure I want an E-210 to replace the Master Forge. I like the 2-burner...

    Hard Cider Baste?

It's the green apple flavor. She's also got some harpoon stuff but she likes it. This angry orchard has been in the fridge for a while.

    Hard Cider Baste?

I started some butts on the smoker a few minutes ago. I just realized I don't have apple juice for my typical mid cook baste. Would Angry Orchard hard cider work? I've got some of that. I can run to the store but would rather not. Or I can use straight apple cider vinegar. Or nothing I guess...

    Kingsford on sale yet?

They begrudgingly gave me the deal at Lowes.

    Kingsford on sale yet?

Will Lowes price match? They are much closer to me.

Found a Weber Gas Grill for $80

Worth it? If it looks to be in decent shape I'll probably buy it but can I still get parts to rebuild it if needed?

Took the WSM to work today

sometimes I have it upside down, sometimes it's not. This is actually my 2nd/spare WSM that I picked up off Craigslist and my first time using it. I tried the door both ways to see which way fit better.

New charcoal messed up my cook.

I've never had any problems with Stubb's charcoal and been using it almost exclusively for the last few years.

Took the WSM to work today

My favorite part of it was that most of them skipped the sauce and almost everyone said they were the best ribs they had ever eaten. I could probably quit my job and show up with the smoker in the parking lot and pay my bills for a while.
