    4th of July feast

    Timing was perfect on my home dry aging experiment, Saturday was 42 days for a 25 lb rib roast. Trimmed and carved, ready for the grill. Made some seasoned marrow bones as a side/basting sauce, and smoked some lobster to make a cole slaw.

    Smoked Lobster tails

    Have grilled them many times, decided it was time to smoke them. I pulled the meat out of the shell, and dipped it into a wash of melted butter and Old Bay seasoning. Placed it back on the shell, made sure there was good airflow.

    Skirt steak - smoked !!
