Skirt steak - smoked !!

Haven’t tried this or heard much about it before, but saw PitmasterX do it and decided to give it a try.

Just a sprinkle of SPOG, and onto the Performer with some hickory. Even made some Chimichurri to go with it. Tasted great, will definitely do this again

Noice!!! I smoked some steaks tonight as well - NY Strips and a Filet. Turned out better than expected and I'll do it again. Sadly didn't have any of that great looking chimichurri.

It was delicious. We kept it simple, just the steak and chimichurri, with some mashed potatoes. And maybe a little red wine……

About how long did it cook? Did you go direct at the end for browning?

I've always grilled it hot and fast, but am willing to give this a try.

I have been thinking about the how to this cook since he posted it so I went and found the video today.

It didn’t take that long, maybe 15 minutes, but it was also a pretty small piece.
And yes, put it the gasser for a super quick sear at the end, maybe 15 seconds per side.
