Weber 18.5 - Pork Ribs and Bacon Wrapped Pork Tenderloin

Second time cooking up pork ribs, first time cooking up a bacon wrapped pork tenderloin, i think it turned out pretty great. I over cook the ribs, but not in a bad way, very moist and tender. I used Oak chunks, just a couple, should have used more. I did this by using a rub, cooked on top rack...

    F'in Stall!

Gotcha, i think that makes a lot of sense. I am total noob to all this so I am still trying to find my way!

    F'in Stall!

This is from Harry Soo: " If you have the top vent completely open and one bottom vent completely open and your pit does not come up in temp, you can open a second bottom vent, followed by a third. " I think the idea is to come up to temps slowly as its easier to go up than down. So start...

    F'in Stall!

Tommy, I used my a couple weeks back for the first time. My brisket, first one ever, turned out decent but not great, I can do better for sure. That said, I ran it on a warmish Texas day, about mid 80's and had 2 closed on bottom, third bottoms was 80% closed, and then the top 80% closed. My...

    Auber HM kit

When purchasing the Heat Meter kit from Auber, you have the option to buy the PI module. Do they install this or is this something that i would need to install when the item arrives? Has anyone purchased all the components through Auber?

    ATC options

Guys, Looking for thoughts on CyberQ Wifi, Auber Instruments, flameboss, and Stoker. I see the Stoker is super expandable, but also pricey and has a long wait time. The CyberQ looks nice and has wifi. The Flameboss looks nice but its expensive as well. The Auber is appealing because at $145...

    F'in Stall!

So you might be pointing out the Weber provides the water pan, and using that might increase the humidity in the cooker. Very possible. Then why not try to bbq the Harry Soo way, no water pan, just foil the heat shield. Second, leave one vent wide open and use the top to regulate heat...

Pulled the trigger on the Cyber Q... Happy Birthday to me!!

Joe, What did your homework say on the Stoker vs. the CyberQ? I noticed in your post you said the Stoker was in the lead. I have seen a few posts regarding some issues with the Stoker working properly. Also, there are several other brands, FlameBoss and a few others. thanks for your help.

    ATC Reccomendation

DigiQ vs. Stoker? Curious how these compare with the Stoker wifi unit. Seems that one also has lots of capability, but no one commenting on it.

    WSM or Electric?

Tommy, I noticed you are in Plano TX. In the heat of the Texas summer, how does the WSM do? Do you struggle to keep the heat low?

    WSM or Electric?

I know where i am, but i want to put this out there anyway. It has been stated that electric smokers are much easier to use and embody the exact same flavor of the coal/wood smokers like the WSM. I know many of you will be die hard about this, but at the end of the day, is it really worth...

    WSM Use in hot climates?

Folks, I live in Texas, which during the summers can get above 100 degrees outside. Any impact on slow and low smoking with either the 14.5 or 18.5 WSM? I have a weber gas and even with just one burner on low, with that outside temps, it can impact the lowest temps i can get to.

Weber must be listening and reading

Just a heads up that a buyer on the east coast commented on the Amazon QA page that they received a 18.5 from Amazon with grommet.

    BBQ Guru Fan and Adpater?

Will the BBQ Guru Pit Viper 10 CFM fan and the Weber adapter work with the LinkMeter v2 Homebrew? I've gone through the instructions on building out the controller unit but not so sure about the fan and adapter. Would I be able to just plug in the viper directly to a port on the homebrew?

1st Cook on 14.5 - ribs and pork butt

So comparing the easy of maintaining temps on the 14.5 to the 22.5 you have or say the 18.5, you would think the 14.5 is a little more difficult to be consistent?

    What would cause this?

I just picked up a Green OTG kettle off Craigslist for 25 bucks, what a steal! But, it also has a couple "age spots" similar to this. I did sand those down and spray them, but only because i had the paint. I wouldn't think this would change the performance all that much and I hope to get a...
