Second time cooking up pork ribs, first time cooking up a bacon wrapped pork tenderloin, i think it turned out pretty great. I over cook the ribs, but not in a bad way, very moist and tender. I used Oak chunks, just a couple, should have used more. I did this by using a rub, cooked on top rack for 2.5-3 hours, then wrapped in foil after spritzing with mixture of apple juice/cider. Put back on for about an hour, and then taken off and put back on the rack to finish for another hours. The tenderloin was pulled once it hit an internal of 140, and then placed on the hot gas grill to crisp the bacon for the last 10 minutes of cooking, pulled at 150. Overall, pretty darn happy with this cook. My third time using the cooker, kept temps around 275 for the duration. It does take a bit of fiddling to keep temps where i want them, hopefully that works its way out as the cooker ages.
