    Fred, I actually ordered Pecan and Apple wood through Ingersole hardware online. You buy it and then pick it up at the store. I also have a friend that is a cabinet maker and he gives me leftover cherry wood once in a while.

    Congrats. I got the 18.5 a few months ago. I couldn't justify the 148$ difference to get the 22" smoker. So far It has been fantastic. I have yet to run out of room and my wife keeps pestering me to make another Turkey. I want another brisket! The stresses of married life.

    I would think using 2 meats would give it a boost of complexity. imagine pulled pork/spicy andouille. Or pulled pork and grilled shrimp. I always add the shrimp at the end anyways so they don't turn to rubber.

    I don't know if you can get this where you live, but I go to the west side market in Cleveland and I buy Jalapeno powder. It's milder that cayenne but adds a better flavor. We usually add about 3 times the amount of cayenne to get a similar heat.
