    First cook of the year

Last year was not very productive in the BBQ department. I believe the first cook was in June. It was also the last cook of the year. Shame on me. 2025 will be much improved. My first cook will be in a day or 2. I made a batch of my 4 Pepper Rub and No. 5 Sauce with additions of some cayenne...

    Incredible BASEBALL

NC won in dramatic fashion. Only to be followed up with the VOLS coming back to win a big one against a great Fl. State team. The college World Series is quite the show this year. Go VOLS.

    3 for 1 Cook

Yesterday I bought two nice 8lb. butts. My wife opted for a whole chicken for dinner tonight. My initial plan was to spatchcock it and cook on the genisis. After thinking about it, I opted to smoke the chicken with apple on the Wsm. Running low on time, I finished it on the gasser. Then I...

    Running hot

My new to me 18.5 is running a little hot. About 275. All lower vents closed. Top vent 50%. I'm surprised. I assume I'll have to work on the charcoal door.

    Coming home!

Well after owning every size WSM and sold them all, I'm coming home. Found a decent 18.5 WSM for a steal. Every aluminum part was bent. I have to assume they smoked more than meat! Currently I'm doing a burn after adjusting the afore mentioned parts. I forgot just how big and deep the waterbowl...

Why do you cook with fire?

Why do you cook with fire. It tastes good. It's simple. It's relaxing. So what happens when we do 'production' cooking-for gifts or for an event? That's a life changer. Suddenly there is the need for more control. There are deadlines. There is an increased volume of meat needed.... That gets...

Resting the Q and food safety

Just a friendly reminder. Holding temp for hot food is generally 140*, minimum. This am I put what started out as an 8lb. butt in a small cooler to rest. Lazy me did NOT preheat it with hot tap water. 5 hours later the foil wrapped butt was in the 130s. Too low to be technically safe for food...

    Mushrooms: wonderful pan roasted

For maximum mushroom flavor, pan roast em. Slice white and portobello mushrooms thickly. Use a non-stick pan with no more than a teaspoon of olive oil, cook on medium high/high heat. I used '8' setting on my stove. SINGLE layer is a must. Cook 4-5 min per side until golden brown. Just before...

Excellent steaks...hot 3 burner genesis...8 steaks on FIRE

It has been a while since I grilled 8 steaks. I went to the Weber book for a refresh on how to. It said grill on high heat...rotate at 1-2 min for grill marks, flip repeat. Well the well marbled steaks dripped fat at 2 min. and looked good BUT...fat flame ups started. I moved the steaks but 8...

    Appliance repair

I am not a handy homeowner. When our 28 y.o. Maytag washer started leaking, my wife and I went shopping. We narrowed it down to a couple of washers $6-700 or so. Then I got busy on the inter webs. Youtube can be dangerous. It could be this or that. I checked hoses and connections. Determined it...

Wanderlust, Camino De Santiago, Overlanding & Itchy Boots

I'm not sure what it is. In '16 I walked the Camino de Santiago. A few years later and I am infatuated with Overlanding. I couldn't get enough of YouTube videos. Now it's Itchy Boots. What a spectacular tour of southern Africa. Is anyone else addicted to Youtube videos of this ilk?

    New Bronco

Any new Bronco owners here who would like to share their ownership experience? I'm a suburban guy not interested in rock climbing or mud slinging but very intrigued with this vehicle.
