It's a matter of economics. My many years old MAK 1-star #184 has 3" hard rubber wheels that roll around like a dream and it might weigh twice as much as the Weber E-315. But they are quality wheels that cost considerably more then the 25 cent Webers.

Much of my enjoyment of a rib roast is the Maillard Reaction crust so I leave bones off to get more bark. The bones get cooked later for stock.

I have a Weber gasser, a MAK pellet grill/smoker, and a Performer Premium (w/o gas assist). I use the Performer more than twice than the other two put together. Good luck.
