    Should I go with the 18.5" or 22.5"?

    I faced this same question a few months ago, and I decided to go with the 22.5" WSM (I just got it a couple of weeks ago). The reason being, I don't have to use all that space, but I have it if I need it.

    I don't think either of the hinges will work for my mini WSM project, but it's ok since I have a 22.5" OTG and a 22.5" WSM to use the hinges on anyway (that's actually why I bought them in the first place). :)

    I bought a charcoal grate for a 22.5" kettle grill, and it's smaller than the one that came with my 22.5" WSM (it's almost a perfect fit for inside the charcoal ring).     Here's the finished product. It smelled as good as it looked (I had neighbors poking their heads out of their windows, trying to figure out what smelled so good), but the taste was even better.

    So, for the first smoke on my new 22.5" WSM, I decided on a bacon wrapped meatloaf (partially to help season the WSM, and because I really like bacon and meatloaf). This post is mid-progress, so I'll be updating after it's finished. WSM started, waiting for it to get to temp. Not there yet...

    Yes, that's the plan for my mini WSM as well. Now, at least partially because of this thread, I have a WSM hinge and a kettle hinge ordered (as I have both), so I'll be able to see if it's possible to use a hinge for the mini. :)

    Would this hinge work for the 14.5" WSM or Smokey Joe Mini WSM? I have a 18.5" WSM water pan I want to use for the top of my mini WSM, and this would help me keep it on top of the tamale pot without having to form tabs (since there's no flange at the top of the pot to hold the lid on).

    My WSM just came in today, and after assembling it, I have realized it is NOT the 2014 model. :( It's ok though, the door has a big enough gap that I can fit my wires through. ETA: Here's a pic of it, put together and sitting next to my 22.5" OTG (with thermometer mod in lid) in the back...

    Saturday Brisket

    That looks absolutely beautiful. I recently cooked a brisket, and it ended up looking nothing like that (I had to hold it for 6 hours due to miscalculating how long it would cook, so there was no bark by the time I sliced it). How did it taste?
