Brisket, it's (hopefully) what's for dinner

I offered to cook a couple of brisket flats for a friend's party today (she's turning 40), and I was planning on making 10-12 pounds. So, I'm not off to a good start, since the briskets hit the WSM about 45 minutes late, and were much bigger than what I asked for. I asked for 2 6 pound flats, but the total weight after it was wrapped at the butcher's shop was 18 pounds (I did trim the fat cap a bit and am cooking it at a higher temp than I planned, which should help get me close to my target time).

Anyways, onto the (so far, only) pic.

Well, I was a little late to the party, but everyone loved the brisket. It was a little underdone, but the taste was spot on. Here's some pics I was able to snap before the second flat was completely consumed (the first brisket was sliced and eaten before I could get a pic taken).
