    These are on my list too. You did great with the first attempt at thin slice work. I'm looking at electrics as well and find a lot to learn, and a lot of junk out there. Really looking into the high end prosciutto slicing knives as it would be great to have for many other things. Great cook here...

I made an indirect " bin " with two nicely fit, full thick firebricks, foiling the charcoal grate with a drip pan , minion with 1 hickory and apple chunk mixed in with the K-Blue.     Performer top rack

    I have one last chore to complete the cleanup of this baby................but do not know how-to. There are 10 weld points on the top rack of the otherwise great condition rack. Did I see somewhere that one can use a little propane home torch and some rod for a spot weld fix ? Or was it only for...
