    I would add, those silicone gloves are hard to get off. But they do allow for handling of hot meat very efficiently for me.

    Sean, both probes were on the edge of the grate. I just tested both probes again in a boiling water bath, and they are spot on, so they didn't get wet. Regarding the rib rack, I think it worked fine. Ribs seemed evenly cooked to me. I will use the rack again.

    It's possible one of thermometer probes was off. But they've never been off before, and I tested both a few weeks ago in boiling water.

    I smoked 3 full racks of baby back ribs today in my WSM 14.5". I used the Brinkman rib rack, loaded full with four 1/2 racks on the top grate, and then the other two 1/2 racks on the bottom grate. This is the first time I've done ribs in the 14.5". I put a Maverick 733 probe on each grate. I...

    Scored 14.5" for $50

    Nice deal. I got a floor model at Walmart earlier this year for $89. It has a dent in the enamel and the paint broke. Wondering if I need to patch that up with some high heat paint or not. I've used it several times already, so not sure really.

    That's my understanding too, with the minion method, you constantly have new briquettes that are lighting up, so why wait?

    What temps were you able to run in the 14.5"? I've also got a 14.5, and beer can chicken is on my list, just haven't had a chance to try it yet.

    Yep, you'll know if you can't get a chimney to light. Chances are, it may be fine. If not, no big deal, go buy some more.

    You need a control unit which will blow air onto the coals as needed. Like a Stoker, or a BBQ Guru. They are pricey though.

    How clean is clean

    I clean the grates and that's about it. When I open the lid, there's an aroma that you'll smell, but it's a good aroma.
