How Do U Use Your Guru Blower Damper?

Ray- Thanks, sorry I misread your statement. I just saw the word "performer" and went right to task in drafting a reply. I agree 10CFS is the right fan to give more options if I wanted to get another smoker (BGE, grill dome, or WSM 22) or use it on my performer which after yesterday it is...

Charcoal or lump when using an ATC

All- I've noticed that with longer overnight type smokes especially in the breezy winter that even using the guru that I'll have to add more charcoal for a 16 hour smoke. Is it better to use lump for these longer temperature controlled smokes so I don't have to reload? I noticed that the...

How Do U Use Your Guru Blower Damper?

Ray- I noticed you mentioned above that you use your guru on your performer. Can you share how you configured it to work with the ash catcher in the way. I assume you had to drill a hole. Would appreciate any help in how you did this. Thanks, Mike

Weber announces sneak peek to 2012

All- Caught this on the Weber Facebook site. Weber is providing a sneak peak to their lineup for 2012. Most of these are accessories but they do provide a preview of the new performer which comes in more color options and whether or not you want the gas assisted ingnitor...

Brian- Most excellent rehab. I have the same grill and didn't want to start this project until I found the right matching paint. Can you provide those details? Thanks, Mike

    smoke flavor when grilling

Jim- For that smokey flavor while grilling without causing the wood chunks to catch on fire is to use the foil method. Take 1 or 2 chunks of wood that you use when smoking with your WSM and wrap the chunks in foil. Leave air vent opening in the foil and place it directly on the charcoal or next...

first time ribs on wsm a success!!

J- Best to light the charcoal using a weber chimney starter. I would stay away from using any instant light kingsford for smoking. Sounds like you are well on you way...good luck. Mike

Weber Kettle Rotisserie Compatibility with the Performer

Joe- I pulled the trigger on the rotisserie with the performer. Absolutely no issues. See my thread from another link on the results. Go for it, you will be impressed with the results. http://tvwbb.com/eve/forums/a/...0039023/m/3871056916 Mike

    Minion Method

All I use my 732 kettle temp probe is just to make sure it doesn't drop below minimums for overnight smokes. Go with the WSM lid temp. Keeps me from getting out of bed just to check. Love the extended range with the 732.

    Broke the ice today

Marc- Rain does affect the ability to stabilize the temps. When it rains I use a large patio umbrella and a stand. I find this the best way to keep the temps where they need to be and keeps the WSM completely dry.

    Balsamic

The only time I use balsamic (basic store brand) is when I grill asparagus mixed with olive oil on the grill. It comes out well and the family enjoys the flavor, but that's the only time I would consider using it.

    22.5" OTS vs. OTG

Barry- Brian is spot on. OTS would be a mess to keep clean especially in windy conditions. The one touch system is awesome and its a breeze (no pun intended) to keep your grill clean. I think all they come in is black. Only in the the performer line is where you'll find color options in...

    Tic Toc Tic Toc

Good luck. Sounds like you've made the right prep. Feel free to include photos after your first smoke on the WSM.

Soon to be one of the few, the proud.

She's be a great partner with that performer of yours. I have the same set up but always find myself in a debate in choosing which one.

    New Performer Owner

Tim- Congrats on the beer can chicken, you are well on your way. May I suggest using an internal temp probe that you can stick in the thigh while cooking. I usually use internal probes when smoking on my WSM but in cases like BCC, I use the probe just to make sure it comes out perfect since...

Any recommendations for a wireless temp monitor?

Darrin- I used Mik's source @ bogpoppasmokers.com since the 732's are hard to find, probably due to the high demand. I've got a shipping notice and I'll let you know when it comes in, hopefully this week. Can't beat the deal for $60 and free shipping. Mike
