    I know a WSM would be great....but the kettles are excellent to smoke on. I like to peek, but I force myself to leave it alone for at least two hours in the beginning....it really doesn't need much maintaining.

    I usually have them on there a couple of hours low heat, indirect after a quick sear on both sides. You really can't mess them up......I had some on there once , went in tomwatch a movie...actually forgot about them and they were Still awesome.

    I smoke on my kettle as well....at 300 or so....and have noticed that I usually have to go about 200 as well for tender.

    pics will be taken! my camera's been dead for a while now... it will be the flat irons.... cubed potatoes with onions... and some veg (zucchini, squash, onions, green pepper, garlic, olive oil) in foil on the grill... and his favorite peach cobbler for dessert, instead of cake.

    Thanks all! The ribs were probably a bit over-cooked, (can ribs be over-cooked?!) not burnt, but they were Almost falling-off-da-bone..... Almost . The meat came off after a nice wiggle....they were probably done about 30-45 minutes prior when my husband was salivating....begging...

    Good luck Robbie! butts were a good choice, i remember i was super nervous with my first one. but really they are hard to mess up..... only thing i would suggest would be to get small ones 5-6lbs... its a good size to start off with.
