    Hello from London!

Welcome to the forum Chris! I'm pretty new here myself and I've found everyone here really friendly and helpful. It's the perfect place to find inspiration for your cooks! You can use Flickr for posting pics they give you a ton of free storage.

using WSM indoors in a fireplace

This sounds like a very unsafe idea. I suggest finding a place outside. Maybe there is some common area you could use outside by the pool or something?

Which fuel do you use and why?

I've always used KBB. Never tried lump but maybe I should experiment with it in the Smokey Joe.

    Hi from the UK

Welcome to the forum Paul! I'm using a Smokey Joe Silver and a small Weber chimney starter. I've noticed that I need to completely fill the small chimney starter because if the coals aren't close enough together in the Joe, the fire doesn't get hot. The bottom damper may help too!

My first smoke on my new WSM 22" 5 Racks Ribs (Pics)

Those rib pictures seriously made my mouth water. Excellent!! Im trying to choose a WSM size. What made you choose the 22"? Do you often cook for large groups?

    Pulled Pork Nachos

Great idea! You can really do a lot with pulled pork! I wonder if pulled pork is that different from Mexican carnitas? Looks so good! :D

That looks delicious! I've honestly never hears of char sui until now I think. Is that some regional chinese food?
