Pork Butts on the WSM right now

Give yourself plenty of time. If you figure 2 hours per pound as suggested and they are done early you can always foil them and put them in a dry cooler with towels or clean newspaper for insulation. They will stay hot for quite a while.

    Keurig Coffee Maker

I have to preface this by saying that i am a coffee snob Freshly roasted coffee has over 850 different flavor compounds. These start to degrade almost immediately after roasting. By the time the coffee is 7 days old almost half of these are gone. By the end of 14 days 70% are gone. The...

    Orange Marmalade Sriracha Wings

I thought about trying the sauce on MOINK Balls this coming weekend. I finally made these wings for a neighbor's football party and they came out great! I was a little worried about some of the "sensitive palettes" that some folks have so I cut the Sriracha to 1/4 cup and that was a good...

    Who is cooking today? 12/21/08

It's -4 right now with a wind chill of -30. I'm trying to avoid going out and clearing the snow that came down overnight. I don't think I'll be cooking outdoors today I know... I'm a wimp. I did take some pulled pork out of the freezer for dinner. Does that count?

    Today’s cook – Prime rib

Looks great, Chuck! i saw rib roasts on sale at two different stores around here. Most were $5.99/lb. I saw a post on another site that Costco had them for $4.99 but I haven't checked locally. It may be time to buy a couple and vacusuck and freeze.

You can also drape it over a rib rack or a metal bowl until it shrinks enough to fit the grate.

    Burnt Ends Recipe.

This isn't much of a recipe I'm assuming hat the point is already cooked. Just reseason it with your favorite rub and cook the chopped point for a couple of hours. Then you can add sauce and enjoy!

    recommendations for good coffee grinder?

For use with an espresso machine I would recommend the Cunill Tranquillo. It is a decent low end espresso grinder. The Baratza is a nice grinder but I am not sure if has the adjustability needed to dial in the proper shot timing. Another option would be a used or refurbished Rancilio Rocky.

    Keurig coffee maker

In my opinion (excuse me but my coffee snob is showing ) they do a decent job of brewing, but their coffee is stale by he time it gets to you. Buy her the Mu K-Cup resusable basket and an inexpensive grinder and then get beans from a local roaster. You'll be much happier with the results.

    An Excellent Coffee Maker

Yeah, he Moccamaster is a great machine. The Newco OCS-12A is also a very good machine. It's really a shame that most machines out there can't even brew at the right temperature. I also roast my own. i use an RK drum in an el cheapo gas grill and can roast up to 3 lbs at a time. I normally...

    Chicago Q recommendations?

Smoque is getting a lot of press right now. I haven't been there yet but it is on my list. The real Chicago BBQ places are out in the neighborhoods. Honey One, Barbara Anns, Lems are smallish neighborhood places that can be hard to find and may not be in the best neighborhoods. You can find...
