I have one for you guys, what if I cook up all my food, pork butts, the day before an event and want to reheat it the next day? What's the best way to hold and prepare the butt the next day?

    Salmon Jerky

Was recently in Austin, TX and at their Whole Foods I had some awesome smoked salmon. While I enjoyed the regular smoked salmon what I really liked was the salmon jerky. So I went out today and bought a fillet and was wondering if anyone has attempted salmon jerky. I would imagine I should...

    Re-heating RIbs

Cooking up some bb ribs on Saturday for tailgating on Sunday. Whats the best way to reheat the ribs once I get to the stadium? I will have a kettle with me so maybe I will just through them on indirect to heat them up. Don't want them to dry out though so maybe I should foil? Any thoughts?

20 lb Turkey.....how long per lb?

I did a 22lber last weekend. Put it on at around 1:30 and pulled off around 6:30 - 7:00. Cooked at around 350 the whole time. At times the temp got up to 390. Came out nice and juicy! Had to put it on the bottom grate because it was so big it couldn't fit on the top.

    Ribs/Chicken Tailgate timing

Ya we plan on getting there around 12:00 then it will probably take about 20 to fire up some coals to heat everything back up. So I would think we would be eating between 12:30 - 1:00.

    Ribs/Chicken Tailgate timing

Plan on doing some tailgating in a couple of weeks for the Broncos/Chargers game. Game is at 2:00. I would like to cook up a couple racks of ribs and a couple whole chickens. What do you think if I got all the meat cooked by 11:30, wraped in foil, held until about 12:30 and then reheated on a...
