I am going to have a cook this weekend and would like to hear about what people have done when cooking brisket and a butt. Does it matter what I put on top?

A quick phone call always works for me. Try giving him a ring.
On a Butt I dont do anything to it as far as cutting fat or skin. Rub it down and let sit for 30 to 60 min as I start the fire. It has come out good for me.
I wouldnt let that stop me from doing a brisket. Use what ever you can find at the time. It is cheaper for me to do a whole one over a flat but I can get them here at anytime.
I have had one for 2 years or so. Have cooked 3 whole hogs as we have plenty of hogs here in FLA. When it isnt deer season, hogs are going to be the next best thing to hunt for.
It works like it says and turns out great but would still like some smoke flavor. You need to season the hog well...
Can't even get a good piece of meat without having something done to it. Looks like I need to start a farm a raise my own brisket.( Im not sure on how to raise just the brisket but I will try if needed )
